Spaghetti & Meatballs
This is a SUPER quick, SUPER easy and SUPER cheap way to get that pasta fix after a long, busy day. It’s not all completely from scratch, which if you’re like me, you prefer. But sometimes we just aren’t feeling it! So when I’ve had a long day, and don’t want to resort to that pack of hotdogs glaring me in the face from the fridge, this is one of my go-to’s! And since I keep most of these things stocked at home, I don’t even need to make a trip to the store.
Here’s what you’ll need, prices included.
All that added up comes out to LESS than $10. And this will feed 4 people for sure, promise! My husband eats super-sized portions. And there is nothing in this world that irritates me more than a recipe that says “yields 4 servings” just for me to fix said meal and it be Weight Watcher sized portions. (No hate WW, but I’m ok with my fat.) And the best part of this – it WILL fill you up!
Start with heating your oven to 375 – your sub rolls are going to become cheesy garlic bread. Mmm
Cut sub buns all the way into two – I actually only used 3 sub buns making 6 pieces of garlic bread.
Sprinkle garlic powder
Top with cheese
Bake until melt-y and delicious – EASY!
Boil your noodles (I used between 1/2 & 3/4 of a box which was plenty)
Drain when tender and I always add a drop of EVOO or some butter to keep them from clumping together
Pour the bag of meatballs onto a plate and microwave for about 3 minutes (believe me, I am NOT a fan of microwave cooking, but how can you argue with speed at a time like this?)
While that’s happening, get your sauce into a deep pan on the stove over medium heat
When the meatballs are done, toss them into the sauce
Let them soak up the sauce and marinade together for about 10 minutes
Everything should come together about the same time, so all that’s left to do is plate it up and enjoy! Pair it with a glass of red wine for the ultimate easy feast. It’s a tried and true dinner classic, made simple! And who can argue with a simple and cheap dinner? Not this momma, that’s for sure! Olive Garden who?
