1 Instant Pot Stuffed Peppers

These are SO easy to make and they are sooooo gooooood!

Ingredients:
4+ Bell peppers
1lb hamburger
Rice-a-Roni Spanish Rice
Tomato juice
Diced Tomatoes
Total Cost ~ $10 for 4 servings

First, in a medium sized bowl, knead together hamburger and pack of Spanish Rice.
Chop the tops off your bell peppers, and clean the guts out, errr, I mean seeds.
Stuff the peppers with the meat/rice mix.
Roll the remaining meat into meatballs.
Line stuffed peppers in InstantPot, and toss in the random meatballs.
Pour in a quart of tomato juice and a can of diced tomatoes, juice and all.
Seal and choose manual for 20 minutes.
Voila! Yummy Stuffed Peppers!

Goes GREAT with mashed potatoes, and rolls or cornbread.

2 Chicken and Rice

A staple meal in this house.

Ingredients:
Chicken breasts or thighs
Yellow rice
EVOO
Salt and pepper to taste

Start yellow rice in separate small/medium sauce pan – according to package directions
Cut breasts in half, length wise, especially thick ones
Heat a drizzle of EVOO in skillet over medium heat
Salt & pepper chicken
Cook chicken in skillet, moving to prevent sticking, until golden brown on each side and cooked through. About 10-15 minutes
Rice should take 15-20 minutes
Total Cost ~ $6 for 4 servings

Goes good with multigrain bread, green beans, or corn on the cob.
